Week Six: Molasses Crinkles

I was kind of tired of all the cake-y cookies, so I wanted to try something molasses-y.  According to Betty, these were the best cookies of the early 1930’s.  Sounds like a good place to start!

3/4 cup soft shortening

1 cup packed brown sugar

1 egg

1/4 cup molasses

2 1/4 cup All-Purpose Flour

2 tsp. soda

1/4 tsp salt

1/2 tsp cloves

1 tsp cinnamon

1 tsp ginger

granulated sugar

First, mix your shortening, brown sugar, egg, and molasses together.

Add flour and dry ingredients, mixing well.  Chill in the refrigerator for a few hours, up to overnight.

Then comes the fun part!  Roll into balls…

And dip the top half in the granulated sugar.

Place on a greased baking sheet and bake for 10-12 minutes at 375 degrees.  Be wary – these overcook quickly.  Also, note that they do spread as they cook, so make sure they are spread apart on your baking sheet.

As noted, these overcook easily – well, mine got a little burned.  They weren’t as soft as I would have liked, but they tasted DELICIOUS.  At the end of the night, I only had 4 left – out of 4 dozen.
